Eggplant & bell pepper dip
Eggplant & Roast Pepper Dip
 
1 small eggplant, roasted
2 red bell peppers, roasted
1 red onion, chopped
3 garlic cloves
2 tbsp walnut oil
1 1/2 tsp sea salt
1/2 tsp ground pepper
1 tbsp tomato paste
 
Pulse in food processor, chill, and serve.
